4-204.112 (B-C): (B) Except as specified in¶(C) of this section, cold or hot holding EQUIPMENT used for TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be designed to include and shall be equipped with at least one integral or permanently affixed TEMPERATURE MEASURING DEVICE that is located to allow easy viewing of the device's temperature display. 4-204.112 Temperature Measuring Devices.(C) Paragraph (B) of this section does not apply to EQUIPMENTfor which the placement of a TEMPERATURE MEASURING DEVICE is not a practical means for measuring the ambient air surrounding the FOOD because of the design, type, and use of the EQUIPMENT, such as calrod units, heat lamps, cold plates, bainmaries, steam tables, insulated FOOD transport containers, and salad bars. (A) Routinely inspecting incoming shipments of FOOD and supplies;
(B) Routinely inspecting the PREMISES for evidence of pests;
(D) Eliminating harborage conditions. Observed a number of live and dead roaches and roach droppings throughout the kitchen. Work with a pest service provider to eliminate these pests and maintain by the next routine inspection. |

(D) Eliminating harborage conditions. Harborage conditions exist in the kitchen area as there are holes in walls to accommodate plumbing and wiring that are not properly sealed. Seal these holes with an appropriate sealing material and maintain by the next routine inspection. |
